Thirty-Two Years Of Getting It Right

We opened with nine rooms and one cook. What has not changed is that somebody who works here answers the telephone, and that the answer is almost always yes.

The terraces went down towards the sea one at a time — the spa in 2004, the cove lift in 2011, the cellar in 2018. Nothing was built to a deadline, which is why none of it looks like it was.

How It Is Sourced

Three Rules The Kitchen Keeps

None of this is a marketing position. It is simply what is possible when the boats are twenty minutes away.

Kilometres, Maximum

Everything on the plate is landed, grown or made inside a ninety-kilometre radius. The olive oil comes from four hundred metres up the hill.

The Quay At Six

A sous chef is at Sainte-Marie when the boats come in. What is good that morning is what is written on the card by seven.

Bottles In The Cellar

Two floors down and cut into the rock, which keeps it at thirteen degrees without anything being plugged in.

A Word From Us

“We do not really run a hotel. We run a house that happens to have eighty-six bedrooms, and we would rather you treated it that way.”

What Stays With People

We came for four nights and moved our flights twice. The staff learned our children’s names before we’d unpacked, and the cove was empty every single morning.

Le Sel is the reason to come and the bay is the reason to stay. I have eaten in a lot of starred rooms and this one actually tastes of where it is.

The spa alone justified the trip — the thalasso pool is cut straight into the rock and you swim looking at open water. I have never slept better.

We booked the penthouse for a family gathering of eleven. Nothing was too much trouble, and the private dinner on the rooftop is the photograph on our wall.

Four Minutes On The Headland

Filmed across one October week — the cove at six, service at seven, and the walk back up when the terrace lights come on.
