One Counter On St Marks

Sal opened a slice counter with one deck oven on St Marks Place in 1987. The rule was simple: a fresh pie out every few minutes, all day and most of the night.

How We Bake

Three Things We Never Skip

The Deck Oven

Stone decks at 650°F: the bottom snaps, the top blisters, the fold holds.

Three-Day Dough

Mixed on Monday, baked on Thursday: a cold rest for flavor and a crisp crust.

A Pie Every Few Minutes

Nothing waits under a lamp: if the board says Just Out, it just came out.

Said At The Counter

Folded, Tipped, Reviewed

4.8Google rating from 2,417 reviews

“The Pepperoni Cups Hold A Little Pool Of Oil.”

That is the whole review. Fold it, tip it, eat it standing at the counter. The board said Just Out and it was.

Maya RobinsonMaya RobinsonWilliamsburg regular

“Came For Open Mic, Stayed For Three Slices.”

I did four minutes on my landlord and nobody threw anything. The white pie is the real headliner.

Leo MarchettiLeo MarchettiTuesday open mic, twice a month

“My Kids Still Talk About The Sunday Class.”

They stretched the dough, argued about toppings and carried their own pies home in their own boxes.

Priya NatarajanPriya NatarajanAstoria, mom of two

“Best 2 AM Slice On St Marks.”

Hot, crisp, folded in paper and handed over by someone who was clearly having a better night than me.
