From Water White To Dark Amber
Honey is graded by its colour, measured in millimetres on the Pfund scale. The flower decides it: locust is the palest we take, buckwheat the darkest.
- Water White 0 to 8 mm Black Locust
- Extra White 9 to 17 mm White Clover, Creamed Clover
- White 18 to 34 mm Raspberry, Basswood
- Extra Light Amber 35 to 50 mm Apple Blossom, Summer Hive
- Light Amber 51 to 85 mm Wildflower
- Amber 86 to 114 mm Goldenrod
- Dark Amber over 115 mm Buckwheat, Knotweed
Types Of Honey
Our honey is spun from the comb, strained through a coarse cloth and jarred. It is never heated or fine-filtered, so the pollen, the flavour and the enzymes stay in.
Every raw honey crystallises in time: the more glucose, the sooner. Apple blossom and goldenrod set within weeks, black locust stays runny for years. Stand the jar in warm water to melt it.
They are the USDA grades on the Pfund scale, measured in millimetres: water white is the palest (black locust, 7 mm), dark amber the darkest (buckwheat, 140 mm).
For years; we print a best-before 2 years from the harvest. Honey keeps when its water is at or under 18.6%, and every batch is measured.
