Three Rules The Kitchen Keeps

None of this is a marketing position. It is simply what is possible when the boats are twenty minutes away.

Kilometres, Maximum

Everything on the plate is landed, grown or made inside a ninety-kilometre radius. The olive oil comes from four hundred metres up the hill.

The Quay At Six

A sous chef is at Sainte-Marie when the boats come in. What is good that morning is what is written on the card by seven.

Bottles In The Cellar

Two floors down and cut into the rock, which keeps it at thirteen degrees without anything being plugged in.
